6 Easy Summer Drinks and Cocktails

Easy Summer DrinksThere’s nothing better than relaxing with a cool, refreshing drink on a hot summer day. While your normal routine may be to purchase pre-made drinks from the grocery store or buy a round of cocktails at a restaurant, it’s easier than you think to prepare your favorite beverages in your apartment. These simple drink recipes are sure to keep you cool all summer:

Non-Alcoholic Beverages:

Lemonade: You can never go wrong with a classic! Made with just simple syrup and lemons, this one is so easy that you can keep a fresh pitcher in your fridge all season long.

  • Ingredients: 1 c. sugar, juice of 6 large lemons (unstrained)
  • Directions: Combine the sugar and water in a small saucepan and bring to a boil, stirring occasionally, until the sugar dissolves completely. Take the saucepan off the heat, and let the simple syrup cool.
  • In a large pitcher, stir the simple syrup, lemon juice and 4 cups of cold water together.
  • Chill and serve over ice

Watermelon Lemonade: A refreshing twist on a classic beverage, this fruity drink will be loved by all.

  • Ingredients: 1 1/2 lb. sliced seedless watermelon, Zest of 1 lemon,  3/4 c. fresh lemon juice, 1/2 c. mild honey, 1 lemon
  • Directions: Blend watermelon in a food processor until smooth. Strain the juice into a bowl, stirring occasionally to push extra juice out of the pulp.
  • Transfer the juice to a large pitcher and add the lemon zest.
  • In a separate bowl, whisk lemon juice and honey until the honey dissolves. Stir this mixture into the watermelon juice, then stir in 1 ½ cups of cold water.
  • Cover and chill. Serve over ice, garnishing with lemon if desired.

Iced Fruit Punch: Kids are guaranteed to love this sparkling version of their favorite fruit punch. Best of all, you can use any flavor you want, so the options are endless!

  • Ingredients: 6 c. assorted fruit juices, 3 c. ginger ale, 3 c. Seltzer water
  • Directions: For the ice, simply freeze the juice in ice trays. When they are solid, you can remove them from the trays and store them in a sealable freezer bag for up to a month.
  • For the punch, fill a pitcher with the fruit juice ice cubes, stir in the ginger ale and seltzer water, and serve immediately. For individual servings, just use an 8-ounce glass for the ice cubes, and then add ¼ cup ginger ale and ¼ cup seltzer.

Cocktails:

Mango Peach Fizz: If you’re in the mood for something tropical, try this simple sparking cocktail.

  • Ingredients: 1 mango, 1 large peach, 1/2 c. unsweetened mango, peach, or orange juice, 1 tbsp. sugar, Peach schnapps or peach-flavored seltzer, Cold club soda, seltzer, or champagne
  • Directions: Puree mango, peach, fruit juice and sugar in a blender, adding more sugar depending on your preference. This mixture can be made up to 1 day ahead and refrigerated.
  • For each drink, fill a glass with ice cubes and add 2 tbsp. of the puree and peach schnapps. Top with club soda, seltzer or champagne.

New Orleans Hurricane: Hurricanes are one of the most popular cocktails for summer vacations, but there’s no reason you can’t enjoy one at home too.

  • Ingredients: ½ c. ice, 2 oz. light rum, 2 oz. passion fruit flavored syrup (grenadine), 1 c. lemon-lime soda, 1 oz. lime juice, 1 oz. Bacardi 151
  • Directions: In a shaker, mix the ice, rum, grenadine, soda and lime juice. Shake well and pour the mixture into a glass, then float the Bacardi 151 on top.

Sgroppino (Italian Cocktail): Sure, it sounds fancy, but this sparkling Italian cocktail requires very little ingredients or preparation. Serve this one to impress your dinner guests – they don’t have to know it only took 2 minutes!

  • Ingredients: 2 c. chilled Prosecco (Italian sparkling white wine), ¼ c. chilled vodka, 2/3 c. frozen lemon sorbet, ½ tsp. fresh mint leaves
  • Directions: Pour the Prosecco and chilled vodka into 4 champagne glasses, then add a scoop of lemon sorbet to each one. Garnish with mint and serve immediately.

Whether you’re getting ready for a beach vacation or just need a day off, these fruity and refreshing drinks and cocktails will set the mood for relaxation. Stock your apartment fridge with a pitcher (or two) of your favorite summer drink so that you can come home to a refreshing treat every day!
